SAMOSA

Here’s a simple recipe for making delicious samosas:

 

Ingredients:

  • For the dough:
  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • Water, as needed
  • For the filling:
  • 3 medium potatoes, boiled and mashed
  • 1 cup peas (fresh or frozen)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 green chili, finely chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Oil for frying

Instructions:

 

  1. Start by preparing the dough. In a large mixing bowl, combine the all-purpose flour, salt, and vegetable oil. Mix well until the mixture resembles breadcrumbs.
  2. Gradually add water, a little at a time, and knead until you have a smooth and firm dough. Cover the dough with a damp cloth and let it rest for about 30 minutes.
  3. While the dough is resting, prepare the filling. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  4. Add chopped onions and sauté until they turn translucent. Then add minced garlic, grated ginger, and green chili (if using). Sauté for another minute.
  5. Add peas and cook for a few minutes until they are tender. Then add mashed potatoes, coriander powder, turmeric powder, garam masala, and salt. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool down.
  6. After the dough has rested, divide it into equal-sized balls. Roll each ball into a thin circle (about 6-7 inches in diameter).
  7. Cut each circle in half to form semi-circles. Take one semi-circle and fold it into a cone shape, sealing the edges with a little water.
  8. Fill the cone with the potato-pea mixture, then seal the open edge by pressing it firmly. Repeat this process for the remaining dough and filling.
  9. Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully place the samosas in the oil and fry them until they turn golden brown and crisp on all sides.
  10. Remove the fried samosas from the oil using a slotted spoon and place them on a paper towel to drain any excess oil.
  11. Serve hot with your favorite chutney or sauce.
