Here’s a basic recipe for vegetarian momos:

Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • Water (as needed)

For the filling:

  • 2 cups finely chopped vegetables (such as cabbage, carrots, bell peppers, and mushrooms)
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, finely chopped (adjust according to your spice preference)
  • 2 tablespoons chopped cilantro (coriander leaves)
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

For the dipping sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar or lime juice
  • 1 teaspoon sesame oil
  • 1 teaspoon finely chopped ginger
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon chili flakes (optional)

Instructions:

  1. Start by making the dough. In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead until you have a smooth, pliable dough. Cover the dough with a damp cloth and let it rest while you prepare the filling.
  2. For the filling, heat vegetable oil in a pan over medium heat. Add minced garlic, ginger, and green chilies. Sauté for a minute until fragrant.
  3. Add the finely chopped vegetables to the pan. Stir-fry for 3-4 minutes until they are slightly softened but still crisp.
  4. Add soy sauce, chopped cilantro, salt, and pepper to the vegetables. Mix well and cook for another 2-3 minutes. Remove from heat and let the filling cool down.
  5. While the filling is cooling, prepare the dipping sauce. In a small bowl, mix together soy sauce, rice vinegar or lime juice, sesame oil, finely chopped ginger, garlic, and chili flakes (if using). Set aside.
  6. Now, divide the rested dough into small, equal-sized balls. Roll out each ball into a thin circle, about 3-4 inches in diameter.
  7. Place a spoonful of the vegetable filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Pinch and twist the edges to seal the momo.
  8. Repeat the process until all the dough and filling are used up.
  9. Steam the momos in a steamer basket for 8-10 minutes until the dough is cooked and becomes translucent.
  10. Serve the hot momos with the prepared dipping sauce on the side.
