CHOLE BHATURE

Chole Bhature is a popular North Indian dish consisting of spicy chickpeas (chole) served with deep-fried bread (bhature) .Here’s a basic recipe:

 

Chole (Spicy Chickpeas):

Ingredients:

  • 2 cups dried chickpeas (or 2 cans of chickpeas)
  • 2 large onions, finely chopped
  • 2 large tomatoes, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon garam masala
  • 1 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh cilantro leaves for garnish
  • Lemon wedges for serving

Instructions:

  1. If using dried chickpeas, soak them overnight in water. Drain the water and rinse the chickpeas.
  2. In a pressure cooker, add the chickpeas with fresh water and pressure cook until they are soft. If using canned chickpeas, skip this step.
  3. Heat oil in a pan. Add cumin seeds and let them crackle.
  4. Add chopped onions and green chilies. Sauté until the onions turn golden brown.
  5. Add ginger-garlic paste and cook until the raw smell disappears.
  6. Add chopped tomatoes and cook until they are soft and oil starts separating from the masala.
  7. Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes.
  8. Add cooked chickpeas along with some water if needed. Bring it to a boil, then simmer for 10-15 minutes until the flavors meld together.
  9. Mash some of the chickpeas with the back of a spoon to thicken the gravy. Adjust salt and spices according to your taste.
  10. Garnish with chopped cilantro leaves and serve hot with bhature.

Bhature (Deep-Fried Bread):

Ingredients:

  • 2 cups all-purpose flour (maida)
  • 1/2 cup plain yogurt
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Salt to taste
  • Oil for deep frying

Instructions:

  1. In a mixing bowl, combine all-purpose flour, sugar, salt, baking powder, and baking soda.
  2. Add yogurt and knead into a soft dough. Add water if needed. The dough should be smooth and elastic.
  3. Cover the dough with a damp cloth and let it rest for 2-3 hours.
  4. After resting, knead the dough again for a few minutes.
  5. Divide the dough into small lemon-sized balls. Roll each ball into a circle of about 6-7 inches in diameter.
  6. Heat oil in a deep frying pan or kadhai over medium heat.
  7. Carefully slide the rolled dough into the hot oil and fry until it puffs up and turns golden brown on both sides.
  8. Remove the bhatura from the oil and drain excess oil on paper towels.
  9. Serve hot with chole, sliced onions, and lemon wedges.
