Chole Bhature is a popular North Indian dish consisting of spicy chickpeas (chole) served with deep-fried bread (bhature) .Here’s a basic recipe:
Chole (Spicy Chickpeas):
Ingredients:
- 2 cups dried chickpeas (or 2 cans of chickpeas)
- 2 large onions, finely chopped
- 2 large tomatoes, finely chopped
- 2-3 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon garam masala
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons cooking oil
- Fresh cilantro leaves for garnish
- Lemon wedges for serving
Instructions:
- If using dried chickpeas, soak them overnight in water. Drain the water and rinse the chickpeas.
- In a pressure cooker, add the chickpeas with fresh water and pressure cook until they are soft. If using canned chickpeas, skip this step.
- Heat oil in a pan. Add cumin seeds and let them crackle.
- Add chopped onions and green chilies. Sauté until the onions turn golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears.
- Add chopped tomatoes and cook until they are soft and oil starts separating from the masala.
- Add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes.
- Add cooked chickpeas along with some water if needed. Bring it to a boil, then simmer for 10-15 minutes until the flavors meld together.
- Mash some of the chickpeas with the back of a spoon to thicken the gravy. Adjust salt and spices according to your taste.
- Garnish with chopped cilantro leaves and serve hot with bhature.
Bhature (Deep-Fried Bread):
Ingredients:
- 2 cups all-purpose flour (maida)
- 1/2 cup plain yogurt
- 1 teaspoon sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- Salt to taste
- Oil for deep frying
Instructions:
- In a mixing bowl, combine all-purpose flour, sugar, salt, baking powder, and baking soda.
- Add yogurt and knead into a soft dough. Add water if needed. The dough should be smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 2-3 hours.
- After resting, knead the dough again for a few minutes.
- Divide the dough into small lemon-sized balls. Roll each ball into a circle of about 6-7 inches in diameter.
- Heat oil in a deep frying pan or kadhai over medium heat.
- Carefully slide the rolled dough into the hot oil and fry until it puffs up and turns golden brown on both sides.
- Remove the bhatura from the oil and drain excess oil on paper towels.
- Serve hot with chole, sliced onions, and lemon wedges.
