Ingredients:

  • 200 grams of chow mein noodles
  • 2 tablespoons of vegetable oil
  • 2 cloves of garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup of cabbage, shredded
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of sesame oil (optional)
  • Salt and pepper to taste
  • Spring onions, chopped for garnish (optional)

Instructions:

  1. Cook the noodles: Boil a pot of water and cook the chow mein noodles according to the package instructions. Drain and rinse them under cold water to stop the cooking process. Set aside.
  2. Prepare the vegetables: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sliced onions. Stir-fry for about 1-2 minutes until they become fragrant and slightly translucent.
  3. Add remaining vegetables: Add the sliced bell pepper, julienned carrot, and shredded cabbage to the skillet. Stir-fry for another 2-3 minutes until the vegetables are slightly tender but still crisp.
  4. Season the vegetables: Pour in the soy sauce, oyster sauce, and sesame oil (if using). Stir well to combine and coat the vegetables evenly. Season with salt and pepper to taste.
  5. Add noodles: Add the cooked chow mein noodles to the skillet with the vegetables. Toss everything together gently using tongs or chopsticks, making sure the noodles are well coated with the sauce and mixed with the vegetables.
  6. Finish and serve: Continue to cook for another 2-3 minutes until the noodles are heated through. Taste and adjust the seasoning if needed. Remove from heat and transfer to serving plates. Garnish with chopped spring onions if desired.
