FAMOUS PONGAL RECIPE

- 1 cup rice (preferably short-grain rice like Sona Masoori)
- ½ cup split yellow moong dal (lentils)
- 4 cups water
- 1 tablespoon ghee (clarified butter)
- 1 tablespoon chopped ginger
- 1 tablespoon chopped green chilies (adjust to taste)
- ½ teaspoon whole black peppercorns
- 1 teaspoon cumin seeds
- A few curry leaves
- 2 tablespoons cashew nuts (optional)
- Salt to taste
- Freshly chopped coriander leaves for garnish
Instructions:
- Wash Rice and Lentils: Rinse the rice and lentils together until the water runs clear. Drain excess water.
- Pressure Cook: In a pressure cooker, add the washed rice and lentils along with 4 cups of water. Pressure cook until both rice and lentils are soft and mushy. This usually takes about 4-5 whistles on medium heat.
- Tempering: In a separate pan, heat ghee over medium heat. Add chopped ginger, green chilies, black peppercorns, and cumin seeds. Sauté until fragrant.
- Adding Cashews and Curry Leaves: If using cashews, add them to the pan and roast until golden brown. Then, add curry leaves and sauté for a few seconds.
- Mixing: Once the pressure releases from the cooker, open it carefully. Mash the cooked rice and lentils with the back of a ladle to a smooth consistency.
- Combining: Pour the tempered mixture into the cooked rice-lentil mixture. Add salt to taste. Mix well until everything is thoroughly combined.
- Garnish: Garnish with freshly chopped coriander leaves.
- Serving: Serve hot with coconut chutney or sambar.
